One of the best parts about the colder weather approaching is getting out the bakeware. Football is on, toddler is playing peacefully and mom getting ready to bake the most simple carrot muffin recipe that is going to blow the whole family away. I know, sounds like the perfect day!
What you’ll need that isn’t the ingredients
- Measuring cups
- Measuring spoons
- vegetable peeler
- Whisk
- Spatula
- Knife
- Cheese Grater
- Muffin sheet (I used a mini muffin sheet for this recipe)
- 2 Mixing Bowls (One for dry ingredients + one for wet ingredients)
You’re going to want to pre-heat your oven to 375 F while you gather everything you need for this recipe. If you’re anything like me, you’re going to scroll to the bottom of this article, look at the ingredients and just put everything into a huge bowl. I typically don’t follow all of the “rules” of baking. Mixing all the dry and the wet separately and then slowly combining the two is just not my style. The members of this house hold still devour these carrot muffins like nobody’s business. BUT just in case it’s yours, I am going to write out the step by step instructions for you to follow. Just before that, here are the ingredients you will need.
Ingredients; simple carrot muffin recipe
- 1 Cup flour (I used cake flour but it’s a personal preference)
- 1/2 Cup Oats
- 1 teaspoon of cinnamon
- 1/2 teaspoon of salt
- 1/2 teaspoon of baking soda
- 1/2 teaspoon of baking powder
- 1/2 cup of sugar
- 1/3 cup of brown sugar
- 1/2 cup of olive oil
- 2 teaspoons of pure vanilla extract
- 2 1/2 cups of grated carrots
- 2 eggs (room temp)
Step by Step instructions
Remember – this is a Simple Carrot Muffin Recipe
Step 1: Preheat the oven to 375 F
Step 2: In a bowl, mix all of your dry ingredients. Flour, oats, cinnamon, salt, baking power + soda and white sugar. Whisk them all together until blended completely.
Step 3: Grate your carrots. Be sure to use the finest grate so that you don’t have big chunks of carrots in your muffins. They may not cook fully if the chunks are too big.
Step 4: In another bowl, mix all of your wet ingredients. Carrots, vanilla, oil, brown sugar and eggs. Whisk together until completely blended.
Step 5: Slowly add all of your wet ingredients to your dry until completely combined.
Step 6: Bake! (For mini muffin sheet 14 minutes. For regular muffin sheet 20 minutes)
Voila! It’s that simple
If you’re using a mini muffin sheet like I did, they bake very quickly. We like our muffins a little crispy on the edges in this house so I baked them for 14 minutes. If you like them soft and gooey, bake them for 12. If you’re using a regular muffin sheet, bake for about 20 minutes or until you can stick a toothpick in and it comes out clean.
