Ingredients for French Onion Soup
- 3 Large Spanish onions (white onions work fine as well)
- 4 tablespoons of butter (Unsalted)
- 6-8 cups of beef broth
- 1 cup of any dry white wine (Optional)
- A pinch or two of salt
- 1 French baguette
- A couple sprigs of dried Thyme
- 1 cup or guyere cheese
- 1 cup of swiss cheese
- 1 1/2 Tablespoons of flour
Preparation
You’re going to be shocked at just how easy this french onion soup really is. A lot of people think making a soup, especially a fancy one like this, is too daunting. But it’s really simple!
- Get your large pot or dutch oven on the stove on medium high heat with the slice onions in the bottom. You’ll want to let them sweat and caramelize a little bit before you add the butter.
- Add butter to the onions and let that cook down and caramelize. This is the longest part of the preparation. It can take about 30-40 minutes or until nice and golden brown.
- Add your beef broth and wine to the onions and let that simmer on medium low for another 30 minutes.
- Slowly stir in your flour to thicken the soup. Be sure not to add it too fast and create lumps of flour on the onions.
- Turn up the heat slightly and let that boil for 5-10 minutes.
- While it is boiling, slice thin pieces of your french baguette, grate your cheese and turn on your broiler
- Transfer the soup into the bowl of your choice, top the french onion soup with two pieces of french baguette and your mixed grated cheeses.
- Place under broiler for a few minutes until the cheese is completely melted and golden brown. (This time will vary depending on the oven and strength of the broiler.
- Garnish with a sprig of dried thyme!
