Spaghetti with fresh tomato sauce
This easy week night dinner recipe is going to blow your mind with just how easy and delicious it is. In this house hold, we have a “butter and noodles” type of toddler, but she will eat this! It is a recipe that is absolutely a staple in your Easy week night dinner vault. I can’t wait for you to try it!
This recipe can be altered so easily so that every member in the family enjoys it. For example, if you want a little kick, you can add some red pepper flakes, if you don’t, just leave them out!
What you will need that is not ingredients
- Cutting board
- Knife
- Mixing bowl
- Pot for boiling pasta
- Sauce pan for the sauce
- Cheese Grater
Not only for this recipe not require a lot of utensils, it also doesn’t require a lot of ingredients. Most of the ingredients in this recipe, you will already have at home. This is why it is such a staple meal in our household. So, lets get into the ingredients.
Easy week night dinner ingredients
- 1 white or spanish onion
- A handful of spinach (You can add as much or as little as you’d like)
- 1 bushel of fresh cilantro (This is a key ingredient to give you that fresh sauce taste)
- 4-6 tomatoes (depending on size)
- 3 cloves of galic
- 1 tsp of salt
- 5 tbps of olive oil
- 1 tsp of pepper
- Spaghetti noodles (or noodles of your choice)
- Sprinkle of red pepper flakes (optional for those who like a kick)
Instructions
So you have gathered all your ingredients and you’re ready to blow your family away with the best meal they have had in a while. Awesome! Here’s how you do it!
- Get your watering boiling for your pasta
- Chop up your spinach, cilantro, garlic gloves and onion. (The smaller the pieces the better)
- Throw all of those ingredients into a bowl and add your oil, salt and pepper.
- Grate all of your tomatoes into the bowl. It works best if you cut the tomato in half and grate that way. (We personally prefer not to have the skin in the sauce so that is the way you can ensure it wont be in there)
- Once you have mixed all your ingredients into the bowl, throw it into a sauce pan on medium high and let it come to a simmer/slow boil. This sauce really doesn’t take long.
- When pasta is done toss it in some oil oil and then add it to the sauce pan of sauce.
Voila! Easy weeknight dinner complete
Top with some grated parm if you wish!
*To add a little something special to this meal we like to use turmeric pasta. It gives a little extra flavor but its totally optional.
