You’ll be wanting to make this at least once a week. It’s all in the marinade for the chicken and how you cook the corn!
We know when you’re searching for easy dinner ideas for two, you’re probably looking for a meal you can surprise your significant other with on a date night. We’re all for that! So lets start with what ingredients you’ll need and then we’ll give you a step by step on how to put this altogether so you can shock your spouse with your gourmet chef skills.
Ingredients you’ll need
- Spinach
- Chicken thighs (You can use chicken breast or any kind of chicken but thighs are absolutely best)
- Carrots (two large)
- Red bell pepper (1 will do)
- Frozen Corn
- Cherry tomatoes (two small handfuls will do)
- two eggs
- Texmex shredded cheese
- Red onion (just 1/2 onion will do)
Now for the marinade ingredients
- 4 tablespoons of Dijon mustard
- 2 cloves of garlic (minced)
- 6 tablespoons of olive oil
- 2 tablespoons of soya sauce
- pinch of salt + pepper
Now for the corn spices
- 2 tablespoons of olive oil
- 1 pinch of red pepper flakes
- 1 teaspoons of garlic powder
- 1 pinch of paprika
- 1 pinch of salt + pepper

Here are the steps
Pre-heat your oven to 400F
- Mix all of your marinade ingredients in a bowl with your chicken thighs and set aside. If you have time to do this the night before, even better. But just the time that it takes you to prepare everything else will suffice.
- Get your corn boiling in water and cook until tender.
- Get your two eggs in boiling water and let them boil for 12 minutes or until they become hard boiled.
- Slice your red onion and bell peppers length wise and set aside.
- Slice your carrots thinly length wise
- Dice your cherry tomatoes into quarters
Once all of your veggies are prepped, it’s time to move onto the chicken!
There are three ways you can cook the chicken and they will all be absolutely delicious. Since this recipe is called Easy dinner ideas for two we will choose the easiest option first.
- Line a baking sheet with either tin foil or parchment paper and lay your marinaded chicken thighs with equal space between.
- Pop them in the oven for 22 minutes or until completely cooked (different ovens may vary for time)
Et Voila! The chicken is as simple as that! Other options would be to barbecue them or pan fry them. Both of which require a little more effort but still equally as tasty!
Now on to the corn!
Once the corn has cooked in the boiling water, place it in a bowl and mix it with the oil, garlic powder, paprika, pepper flakes, salt + pepper. Once all combined, toss it into a frying pan on high heat to give it a slight crisp.
Now for the assembly
This is the fun part! You can either do this part alone and surprise your significant other with the masterpiece presentation I know you will serve OR you can have them join in on the fun!
Put your base of spinach in each bowl and assemble each ingredient around the bowl. The photo up top is what I try and make mine look like every time but you can have fun with this part!
